Yum yums: How to make Apple Crumble Cup-cakes

What ever happened to Spring eh? Here’s a little something to brighten up the dull weather we seem to be having!

Apple Crumble Cupcakes

These are truely delicious with a cup of tea or coffee and double as a fantastic family desert when served warm with a little custard.
Makes 12-15 depending

110g (4.5oz) unsalted softened butter
110g (4.5oz) caster sugar
2 eggs, beaten well
1 apple pealed and grated
110g (4.5oz) self-raising flour
1 tsp cinnamon

Crumble topping:

30g (1.5oz) unsalted butter
50g (2oz) caster sugar
50g (2oz) plain flour
1 apple, pealed and grated and cut into small pieces
50g (2oz) walnuts finely chopped. (optional)

Step one:
Pre-heat oven to 180 C (350f/gas mark 4) and line a  bun tin with 12 paper cases.

Step two:
After measuring all dry ingrediants and grating the apple, in a bowl cream together the caster sugar and butter until pale and creamy.

Step three:
Gradually beat in the eggs a little at a time beating well after each addition.

Step four:
Add the grated apple mixing well.

Step five:
Fold in the flour and cinnamon using a metal spoon.

If the mixture is a little stiff you can add a small amount of milk to make for better dropping consistency.Sylvia Walsh 2011 ©Sylvia Walsh 2011 ©

Step six:
Mix together well and spoon the mixture into the prepared cases.

Before you put the cupcakes into the oven, melt the butter in a pan on the stove.

Add the grated apple and add the walnuts if using.

Mix well and stir until the mixture begins to change colour slightly.
Remove from the heat and place a spoonful of the topping onto each cupcake.

Bake in the oven for 15-20 minutes until well risen and golden brown, checking every ten minutes or so.
Stab the centre with a knife to make sure the cakes are cooked thoroughly, if the knife comes out clean they are done.
Transfer from the oven to a wire rack to cool.
These are great eaten on their own or for a real treat they can be served with a spoonful of whipped cream or custard.
