These chocolate goodies are really rich and its not easy only having one!
I Love You Cupcakes, makes 12.
100g Dark Chocolate
100g Caster Sugar
110g Soft Unsalted Butter
75g Self Raising Flour
15g Cocoa Powder
2 large Eggs (beaten)
60ml Double Cream
100g Milk Chocolate
150g White Chocolate (Melted)
Pink Food Colouring.
Preheat the oven to 180’c/gas mark 4 and fill a bun tin with 12 paper cases. Chop the Dark chocolate pieces and melt in a heat proof bowl over a boiling water. Let it cool slightly. In a separate bowl cream the butter and sugar till pale and smooth. Add in the beaten eggs and mix well. Next add in the melted chocolate to the cake mixture, mixing well again. Next fold in the flour and cocoa powder. Spoon the mixture into the prepared cases and bake on the top shelf of your oven for around 15-20 minutes, checking every 5 or so minutes.
Next divide the melted white chocolate evenly between three small bowls, add your pink food colouring to two of the bowls creating two different shades of pink. Make out three piping bags and spoon in the mixture into each bag , pipe different coloured hearts out into varying sizes (these will sit on top of your cupcakes when set) onto a lined baking tray. Leave the hearts to set at room temperature (or in the fridge, whichever suits!)
To make the topping to your cakes bring the double cream to boil in a pan over mild heat, , pour in the milk chocolate and stir until the chocolate has melted and mixed well with the cream. Leave this too cool so it becomes thick enough to spread. Spread this chocolate mix onto the cakes and decorate with your pre-made chocolate pink and white hearts.
Serve up on their own or with a side of whipped cream or ice-cream of your choice. Bon a petite! xoxo
