Upside-Down Cake

I’ve been on a bit of a mad baking session since coming down to Shanes and luckily I wasn’t making the usual cupcakes (that i’m now sick of) I was making something new! A few of you lovelies have asked for the recipe so here it is!

Upside down Blueberry Cake.

What you need:
200g plain flour
2 eggs
1 tsp of baking powder
Pinch of Salt
75ml of vegetable oil
300g of castor sugar
200ml buttermilk
50g butter
225g Blueberries (or Oranges, Pineapples, Apples..)

What you need to do:

One. Measure everything out and split your sugar in half. Melt the butter in a saucepan and pour in 150g castor sugar, gently let it simmer and pour in your blueberries, leave this to the side. Two. Sift your flour, baking powder and salt into a bowl. Three. Crack your eggs into a measuring jug and whisk together. Add the remaining sugar, buttermilk and vegetable oil to your eggs and give it a good whisk. Add this mixture to your dry ingredients and mix well into a batter. Four. Pour your blueberries into a medium sized pan and spread evenly covering the base. Pour your batter on top, spreading evenly and smoothly. Bake in the oven at 180c for 30-35 minutes.Five. When out of the oven, leave to cool in the pan completely before turning the cake over onto a plate. Serve with cream, ice cream or on it’s own with a cup of tea.

*We made three variations, Blueberry, Orange and Pineapple. My favourite was of course the Blueberry (I just adore everything in this flavour) and Shane loved the Pineapple cake. Orange was good and was eaten just as quickly as the others but Blueberry really out did everything else!* Happy Baking! XO
